Jordan’s path in the kitchen started early and has taken him from Sydney to Tokyo and back again. He trained in some of Sydney’s top hatted restaurants before heading to Japan, where he worked at the renowned Yakitori Hachibei and immersed himself in the craft of Japanese cooking.
Back in Australia, he became head chef at Cook and Waiter, one of Sydney’s most respected catering companies, leading a tight team and delivering food for major events across the city.
Japan called again, and this time Jordan opened the Tokyo outpost of Longrain as head chef, bringing a bold Thai menu to life. From there, he was invited to lead Restaurant Turntable in Shibuya, where he cooked a seasonal omakase menu over a wood-fired grill using ingredients sourced from Tokushima.
In 2021, he returned to Sydney to head up the kitchen at Atomic Beer Project in Redfern, creating a fun, modern Asian menu that turned heads and filled seats.
Now he brings it all together at Firebyrd. A culmination of everything he loves about food and hospitality. Rooted in his journey, inspired by Sydney, and grounded in Australia’s incredible produce.
